In the journey of finding the real chocolate taste, the chocolatier, who was trained under Trinidadian & French experts researched the best cocoa varieties that are grown in Sri Lanka.
Some of these best cocoa varieties such as Trinitario & Criollo have been introduced from Trinidad. the cocoa tree (Theobroma cacao) is reported to have originated in the amazon basin and has spread to Central America and Caribbean countries such as Trinidad & Tobago. the natives in the region such as Olmecs and Mayan have considered the cocoa as the "food of gods" and they enjoyed a bitter chocolate drink.
